This book is meant to serve as an introduction to Korean food and Korean culture to people who may have little knowledge of either. Korean foods have a near endless number of variations and can be easily adapted based on the season and availability of diverse produce and meats. We have selected well-known, beloved Korean foods that are simple and easy to cook, so the chef new to Korean cooking may have maximum enjoyment and minimal frustration in their preparation.
This book contains an introduction to the ingredients used in these recipes, the related cooking processes, and cooking tips or variations for each food listed. Most of the foods in the book can be finished with only an hour of work. These include Gimbap, Egg roll, and Gamjajeon. Only two of our recipes take more than two hours to finish, due to stock preparation. We chose to include these recipes because the payoff for your patience will be well worth the time it takes to prepare them.
We hope that this cookbook will be your guide and friend as you take your first steps into Korean cooking. Korean food is very healthy, well-balanced in terms of nutrition, and rich in low-fat recipes. We believe that these traditional, home-style recipes can serve as an easy first foray into a love of delicious Korean foods.
